quick and really easy noodle soup



This soup is really quick and easy, requires no cooking (or almost no cooking), and tastes nice. Recipe does one big bowl, enough for one person as a main course.

You need a handful each of fresh noodles, chopped vegetable of some kind and chopped greens. I used bok choy and kai lan, but any kind of cabbage or spinach would work. You could substitute any vegetable you want, but hard vegetables like broccoli or carrots would need to be blanched first in boiling water.
For protein, use a handful of unsalted roasted peanuts. Deep-fried tofu, cut into small cubes, is a good addition as well.
Other tasty things to include are finely chopped garlic and ginger, chillies, sliced spring onions, fresh coriander and garlic chives. You can put meat or fish in if you want I suppose.
For the soup base, add a teaspoon of vegetable stock powder, a teaspoon of hot chilli sauce (Sriracha), a tablespoon of soy sauce and a dollop of hoi sin sauce.

Pile everything into a bowl, pour on boiling water from the kettle. Put a plate on top of the bowl, allow to sit for a couple of minutes. Remove plate, stir and eat.

For an even lazier method which requires no soup base ingredients, try using instant noodles. Put the noodles in a saucepan with the contents of the flavour sachet and about 2 mugs of water. Boil until the noodles are cooked through. Put all the other ingredients (vegetables, etc) in a bowl, pour the noodles and broth over the top.
